This Festive Bikini – The Method

We present a simplified version of a drink featured on a new cocktail list. This is a large-volume premix that's packed full of flavours of a holiday season, making it perfect for your celebration. Reserve the remaining citrus syrup to use in breakfast cocktails, desserts, or to make more rounds of bikinis.

Bikini Recipe

Makes enough for 10 people

Ingredients for the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Premix (produces 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Method

For the Cordial: Combine every components inside a pan, bring to a light boil, agitating so the sugar melts. After that, turn off the stove and leave to cool completely. Decant into a sealable bottle, cap it keeping it in the fridge, where it will keep for around four weeks.

To make Cocktail Base: Pour the specified liquids in a large bottle, let it rest for an hour, then pass it through , ideally through muslin, to ensure it's perfectly clear.

When ready to serve: Add 85ml from the cocktail base to a mixing glass packed with ice, and stir lightly for about 60 seconds to chill. Filter to a chilled martini glass or a similar vessel, decorate with a few cranberries and finish by giving it a brief mist of mandarin oil above the glass.
